Many things go hand in hand with Los Angeles- sunny weather, traffic, beaches, Hollywood, and of course, brunch. Brunch has been a craze that has swept through Los Angeles lately, and is now a common pastime of our Sunday mornings. I mean who doesn’t like starting off their day with some delicious food in this beautiful city!? However, with brunch becoming a big to-do, more and more places have catered to the demand. Now, almost every restaurant has their own brunch menu. With so many options to choose from, it can be very difficult to choose the right one. Well today we would like to tell everyone about a unique brunch that is definitely worth a try!

Chef Aaron Ziegler’s mission statement is the following.

“A complete re-imagination of the food industry; sustainably, through a forward thinking approach to wellness and environmentally focused practices. Combining Slow Food and Modern Method food movements.”

Chef Aaron Ziegler has been hosting his own brunches in his very own backyard called Brunch By The Beach by Bull & Dragon. The location doesn’t get much better- close to the sea in his trendy garden that provides a very intimate atmosphere for your brunch.

Even better than the location though, is the specially prepared food from the talented chef. Not only is it delicious and healthy, but completely fresh with many of the foods coming straight from his garden! What restaurant can give you food that fresh?

The Chef’s Process

Aaron sources only the best local, organic, sustainably and humanly raised product. Simply organic, grass fed, or hormone and antibiotic free isn’t enough however. Most of the produce used comes from his permaculture garden in which he employs no till, carbon sequestration, and water conservation techniques to bring you vibrant nutrient rich produce. Aaron expects the same from all of his suppliers.

Aaron’s personal style of cuisine lives where the slow food movement meets modern method. At each event, the menu is an original creation, crafted to fit the event’s theme. As a skilled butcher, Aaron is likely to showcase his hand crafted salumi or charcuterie such as “Salsicha de Bra”, “Nduja”, or his signature maple cured bacon. Other signature dishes include a rich bone broth style Bouillabaisse from local fishermen, or vegan fair such as avocado bruschetta with crispy cici beans, waffle cut heirloom beets, and fried leeks

Chef Aaron employs a no till carbon sequestration style of gardening, creating wonderfully vibrant produce in a sustainable, organic manner. In addition to the Bull & Dragon Garden, imagine House cured bacon from completely range fed foraging Mangalitsa pork, or completely grass fed and finished beef. At Bull & Dragon, all butchering and charcuterie are done in-house, and with the garden create wonderful dishes where the “Slow Food Movement” meets “Modernist Cuisine”. Now, living in Venice, Chef Aaron enjoys paying tribute to his diverse upbringing and 25 years of culinary artistry, by sharing his version of living art. During meals with Aaron you can expect a complete dining experience, including rotating galleries of local Venice artists, local musicians, and friends.
